Well there’s about 9 days of summer left! Now I know what you’re thinking “ummm no summer was basically over when kids started school” or “summer was over on Labor Day” Yeah I pretty much think the same thing. But we still have some hot days left Yay us! We got to enjoy these last few hot days before we start getting those chilly nights. Which I can’t wait for!
So this past Labor Day weekend was full cookout’s with lots of food like burgers, chorizo’s, rice, Pico de Gallo, ribs and of course Corona’s. But when I got home after our cookouts, I was craving something sweet but somewhat healthy because I think I had a little too much to eat, more like ate nothing but bad things. I really wanted to just go to the gas station and buy a bar of ice cream but I knew I would have felt so guilty. So when I got home I basically made my own popsicles.
I was really happy with the end result. I ended making these popsicles with what I had in my refrigerator. I actually had a lot in hand to make these because I had just gone to the grocery store. Yay! I feel like I won something big in life! Don’t you hate when you want to cook something and then you go to pantry and of course you’re missing a few things, the worst! So any how these are super fast, healthy, light, and tasty. Oh yeah and they have a little crunch with those yummy coconut flakes!
Let me know how they come out!
- 1 Cup of Coconut Water
- 2 Cups of Frozen Mango
- 1 Cup of diced Pineapples
- 1 Banana
- ½ Cup of Coconut Flakes
- Add all ingredients in the blender, except the coconut flakes.
- After it's all blended add the flakes and pour them into your Popsicle Molding Trays
- Freeze for 3 hours
I know my dogs enjoyed them!
