My girlfriend Crystal is expecting a baby boy next month and I’m so thrilled for her. It’s amazing to see her, to getting engaged, to getting married and now expecting a baby all within a few years. I can’t wait to meet Baby Anthony!
Since she is having her baby boy next month, I figured it would be a good time for us to get together before the new addition arrives, more like a good time for the first time parents, since they probably won’t have a lot of time to go out with their friends… especially after the baby arrives. I’m sure many of you parents know what I’m talking about.
Crystal and her husband Kris are big pasta lovers and so are we! Honestly who isn’t really? So I decided to cook one of my favorite recipes from the famous Chef Giada de Laurentiis….her Stuffed Pasta Shells with Arrabbiata Sauce. When you’re having a big crowd and need to cook up something easy and filling, that is a great recipe.
I invited my close friends Ramon and Nicole; they’re also very close with Crystal and Kris. I asked Nicole is she can bring a salad to share with us and what she brought was delicious! So I asked her if I can put it on the blog because I am sure many people would enjoy it. Of course she said “yes” (Smiley Face). My husband who is not a big salad guy asked for seconds, of course along with pasta. I’ve notice it can be challenge for certain people to enjoy a nice salad, especially if they never got raised on eating salads. This salad is light, delicious, with the goat cheese is gives it a creamy and mild flavor. Then when you bite into honey pecans you will get a nice sweet crunch, that will keep you wanting a little more. I hope you enjoy this salad as much as we all did. Don’t forget to add a little bit of your favorite dressing! I topped mines with White Balsamic Vinaigrette yum yum yum!
- 1 container of Spring Mix(about 7 cups)
- 1 red tomato (cut them however you would like... diced, sliced or wedges)
- 1 yellow tomato (cut them however your would like... diced, sliced or wedges)
- 1 cucumber peeled and sliced in halves
- 2 Table Spoons of Goat cheese(crumbled)
- ¼ cup of Honey Roasted Pecans
- In a salad bowl add the spring mix
- Add all the rest of the ingredients on top of the salad
I also had a beautiful spread of Brie cheese, sweet pepper jam, crackers, nut mix, sharp cheese and grapes. I got all my ingredients from the Amish market. I believe everyone should have a Amish market near by. All their stuff is beyond this world!
