Cucumber Watermelon Pico de Gallo

Guess what happened this weekend? …

A beautiful green symmetrical cucumber appeared in my garden. Okay , so it didn’t magically appear.

In the beginning of the summer me and my lovely daughter planted a variety of  seeds.  

The sad thing is that most of my vegetables didn’t survive this year. The culprit… WEEDS.

Okay, so most of it was my fault. Every week I routinely check my garden, I was so excited that these beautiful green plants were sprouting. I could have sworn all my veggies were thriving. Boy was I wrong. All those green plants turnt out to be just plain old weeds.

The only veggies left standing are the tomato and  cucumber plant. Which I am alright with. At least something grew. 

Looking at the bright side of things I was so excited about my cucumber.  Most importantly, I was even more excited about eating it.  I looked in my fridge to see what I could come up with. I had tons of watermelon, some cilantro (a staple here in my house) , and an orange.  It sounds a bit strange, but when you taste it all the flavors make sense.

You could eat it as a side salad or you can eat it with some chips. Heck you could even top it on some grilled chicken.

Cucumber Watermelon Pico de Gallo

Ingredients
  • 1½ cup of diced watermelon
  • 1 cup of diced cucumber, seeds removed
  • ½ cup finely chopped cilantro
  • ⅓ cup minced red onion
  • 1 navel orange, juiced
Directions
  1. In a bowl add watermelon, cucumber, cilantro, red onion, and the juice of the navel orange.
  2. Mix all ingredients until well incorporated
  3. Enjoy!
