I am all about simplifying things in life. Why complicate things…?

Easy side dishes are my go-to. It has to of course be delicious and healthy.

Lately, I feel like I have been eating the same type of salad every day. Its great having baby spinach once in a while, but after months of eating the same thing over and over…it tends to get boring. Okay hasn’t been exactly months, just a couple of weeks. It’s mainly my fault. Every time I do my weekly shopping, it’s like second nature…must pick up baby spinach.

I had to break this vicious cycle. Mostly, because my family was starting to complain. I came across some fresh mozzarella; I was like OK its time to change my salad game.

Caprese Salad, is a delicious alternative to your everyday salad. It consists of fresh mozzarella, tomatoes, basil, and olive oil. Its absolutely delectable!

It’s easy, light, and healthy. What more can you ask for?

Serves: 6
  • 16 oz fresh mozzarella, diced
  • 1 cup of fresh basil, minced
  • 2 medium tomatoes, diced
  • 1½ TBS of extra virgin olive oil
  • ½ tsp sea salt
  • ¼ tsp of black pepper
  1. In a large bowl mix all of the above ingredients.
  2. You can either eat right away, or cover and place it in the fridge until ready to eat.
