Easy side dishes are my go-to. It has to of course be delicious and healthy.
Lately, I feel like I have been eating the same type of salad every day. Its great having baby spinach once in a while, but after months of eating the same thing over and over…it tends to get boring. Okay so..it hasn’t been exactly months, just a couple of weeks. It’s mainly my fault. Every time I do my weekly shopping, it’s like second nature…must pick up baby spinach.
I had to break this vicious cycle. Mostly, because my family was starting to complain. I came across some fresh mozzarella; I was like OK its time to change my salad game.
Caprese Salad, is a delicious alternative to your everyday salad. It consists of fresh mozzarella, tomatoes, basil, and olive oil. Its absolutely delectable!
It’s easy, light, and healthy. What more can you ask for?
- 16 oz fresh mozzarella, diced
- 1 cup of fresh basil, minced
- 2 medium tomatoes, diced
- 1½ TBS of extra virgin olive oil
- ½ tsp sea salt
- ¼ tsp of black pepper
- In a large bowl mix all of the above ingredients.
- You can either eat right away, or cover and place it in the fridge until ready to eat.
