Have you ever felt as if you may be doing too much at once…?
I have been feeling like this for the last two weeks. It’s my own fault. I have been lacking on my time management skills. Not only that, my house was in desperate need of sprucing up.
We have this extra room… One day I am hoping it will turn into a nursery, but that is beside the point ;). This “Extra room” has turned into a place where everyone throws in stuff that they don’t need. By everyone, that includes myself. It has literally been driving me MAD. Every time I open that room, it’s like my anxiety kicks in. Enough is enough, me and Jamar decided it was time to dedicate last weekend to clean it. Now, I can actually walk into the room proudly. If cleaning wasn’t hard enough… our dryer died on us! Seriously, just our luck.
Some things are just not in our control. You kind of just have to go with the flow. Besides there is way too much to be grateful for!
Now lets talk food.
Radishes were on sale this week. I am one of those strange people that absolutely love radishes. When I bite into one, I get excited for the spiciness to kick in.
If your crazy about radishes, you will love this simple yet delicious recipe. My Latin roots almost always show in my cooking. Something about adding cilantro, avocado, and limes, adds the perfect medley of flavors. You can eat this Pico de Gallo with your favorite tortilla chips, you could make it as a side salad, or you could put a scoopful onto your meal. You can’t go wrong with it. To make things spicier, sprinkle a little bit of crush red pepper flakes.
- 2 avocados (diced)
- 6 radishes(grated)
- ½ cup cilantro (minced)
- ½ lime (juiced)
- ¼ tsp salt
- ⅛ tsp black pepper
- Pinch of crushed red pepper
- In a large bowl, mix avocado, radishes, cilantro, lime, salt, pepper, and red pepper.
- Place in the fridge for approximately 30 minutes, before enjoying.
